Easy. One of each please grin

Actually, I have the full set from Synthogy Ivory which includes the German_DII, Bosendorfer_II and the Studio_7ft_II (which I think is sampled from the Yamaha C7 grand). Unbelievable pianos.

Pianoteq has been getting better and better. I waited until v5 to buy in, but the just-released v8.4 that supports the new Kawai piano is superb. I think Modartt are at the forefront of modelling technology. I haven't tried Organteq yet, but I don't doubt that is does in incredible job of modelling pipe organs.

My 2 TB Thunderbolt 3 SSD was getting full, so I had to move all of my non-licensed Kontakt instruments to a USB3.2 SSD. I have all of VI Labs pianos except Modern U and now the new Modern D. As much as I'd love to have both, Pianoteq has gotten good enough for these old ears that I just can't pull the trigger on any more super large piano sample libraries. I started with Pianoteq Stage, then upgraded to Standard, then upgraded to Pro and just yesterday upgraded to the Bundle (my cost: 189 €) instead of paying 49 € for the new Kawai. I had licenses for 11 of their instruments, but I got licenses for all of the remaining instruments (more than 10 at 49 € each) for 189 €.

Pianoteq Stage gives you the full Pianoteq modelling engine, but no low-level tweak ability AND two instrument packs of your choice, for 139 €. Considering that each pack costs 49 € on its own, you get Pianoteq for 51 €, a real bargain in my opinion.

I highly recommend checking out the demo (standalone version included!).
